With a larger diameter across the bottom, heat from the burner is distributed across a significantly broader surface area, preventing the common problem with large narrow pots where the centre of the base overheats while the edges stay cooler. This matters enormously for large biryani and haleem, where a hot spot at the centre of an 11-litre pot can scorch the entire batch. The wider shape also means rice sits in a shallower layer crucial for preventing undercooked layers at the top and burnt layers at the bottom in a large biryani.
